catchall and simscan

I must have something mis-configured, but haven't figured out what.

I have a domain set to catchall-deleted, but when the server slows down and I look at it, there are whole bunches of noname@domain.com being processed for spam (simscan and spamc.

How can I cause mail to noname@domain.com to immediately disappear down the bitbucket?
